This week I made chicken lettuce wraps, similar to what you can get at PF Changs as an appetizer. It was pretty labor intensive, as I had to make a marinade, cook the chicken, dice the chicken and water chestnuts, re-cook that in a sauce, make a dipping sauce, and prepare the rice (mung?) noodles. It paid off though! Then, last night I made pizza from scratch. Made the dough in our sexy red Kitchenaid mixer, let it rise for an hour, punched it out, sautéed diced tomatoes with fennel and a couple of spices, and mixed fresh mozzarella from Mastellone’s Deli with the remainder of our fresh basil from the now-bald plant, Basil, you grew and served us well in 2010. The pizza was crazy-delicious.
